This recipe has been a Christmas tradition in our family since the 1960's when my mom wrote it down after watching someone prepare it on TV. It is by far the best Christmas Cake I have had, we fight over it and it's now to the point where one of these is not enough for the family. My sister bakes this cake and so do her two daughters and when I'm not around to grab some of theirs, I bake it myself. Absolutely delicious and great for anyone who doesn't want raisins or nuts in their Christmas Cake or who wants a new variety of colorful cake to offer their guests.

Once it has cooled, just wrap it up in plastic wrap, then tinfoil and let it sit for about a week (if you can!) before serving. Yum! It's the colorful cake just to the left of the blue lid on this pretty tray of assorted Christmas goodies.

ReplyDeleteIt looks like fruit cake... which my parents love, but which I don't care much for myself. Apparently my aunt makes a mean one, but I wouldn't really know, because I refuse to try it. :)
